Here is a really good article on whether to thin provision disks within vSphere, on the disk storage array or both. I found it clearly written and easy to follow. It also covers topics such the different formats of virtual disks provisioning and the issues (if any) around creating thin provisioned disks on storage that already offers thin provisioning. Well worth a read!
