The VMware performance team have released a white paper on running MS Exchange Server using NFS, iSCSI and Fibre Channel storage.  As this posting from VMware’s Todd Muirhead mentions close performance results were seen across all three storage types with, as would be expected at this stage, fibre channel coming out on top, though not by as much as you’d maybe think.

If you are still holding off from virtualizing your Exchange environment this may be the whitepaper you need to read as it also outlines how a single ESX host can support 16,000 users distributed over 8 virtual machines.
